Excuse the stupid title, Eva and I were planning to watch the new Twilight movie today, so I have vampires on my mind.
We didn't go in the end, it was just too hot to go outside.
Yesterday we had build some shelves for Eva's room and this morning I moved her books back in.
This is how she spent the day:
I did some more sorting and cleaning.
But seeing that it is Sunday, I also wanted to bake.
This is the first time I made shortbread, and now I am in love!
You need only three ingredients, it takes hardly any time, and it is so delicious! Why did I never try that before?
This will definitely become a Sunday afternoon staple.
You will need:
125 g (4 oz) of butter
55 g (2 oz) of superfine sugar
some vanilla essence
180 g (6 oz) of flour
Melt the butter and mix in the sugar, beat until foamy, add the vanilla essence.
Add the flour.
Roll the dough out (or press it out with your fingers, which is what I did) until it is about 1 cm (0.5 inch) thick.
Cut out circles, put them on baking paper keep in the fridge for 20 minutes.
In the meantime, preheat the oven to 190 ° C (375° F).
Bake for 10 to 15 minutes or until golden brown.

Books, a chair, and some quiet....perfect! SO nice you encourage her reading. I love making shortbread just for that reason- few ingredients, yummy result! :)
