Caramelised nuts
The salty almonds disappear very quickly around here. On Saturday I went to the shop to get some more raw almonds
and they were sold out. The only thing they had were mixed nuts.
So I took some mixed nuts home and decided to go sweet this time.
The taste and smell of caramelised nuts reminds me so much of going to the fairground, of merry-go-rounds and twinkling
lights and giggling with your girlfriends and coming home too late...
They are pretty easy to make.
For 300 g (2 cups) of mixed nuts, you will need about 200 g (1 cup) of sugar, a teaspoon of cinnamon and about 150 ml
(0.6 cups) of water.
Start off by putting some baking paper onto a tray.
Then bring the sugar, cinnamon and water to the boil in a wide saucepan. Now add the nuts and stir continuously:
After some time (it felt like half an hour but probalby wasn't even 10 minutes) the sugar mix will become crumbly:
Just keep on stiring until it becomes fluid again and the nuts are glossy and covered with the sugarwater:
Then spread them out onto the baking tray, idealy without them touching each other (this didn't work at all in my case,
but the nuts were easy to break apart once they are dry):
Let them cool down and enjoy!
