The things mothers do... (butternut soup recipe)


Today, instead of doing some lovely crafty things, writing a new blog post or lying on the couch with a cup of tea,
I went to the shop, bought some fresh butternut and pumpkin, and went home to cook a healthy, nutritious meal for my family.

The results: My man gulps it down without comment, sending sms's at the same time, and my daughter eats one spoonful and declares she is not hungry. 'And what's for desert, mommy?'

Despite these rather disappointing reactions I would like to give you the recipe, because at least I thought that the soup was really quite delicious.
Maybe people in your household have better taste (or at least better manners :-) ).


You need 500g ( 1 lb) of pumpkin and 500g (1 lb) of butternut,
peel both, discard the seeds and cut into cubes.
Slice two onions and brown them with a bit of oil.
Add the pumpkin and butternut pieces and 4 cups of broth (vegetable, beef or chicken).
Let it simmer for about 20 minutes or until the squash is soft.
Add some lemon juice, salt, pepper and a pinch of chilli.
I also added some lemon verbena leaves.
Put it portion by portion into a blender.
Then put it back into your pot and add a can of coconut milk.

Heat, serve and enjoy :-) 





 



Btw, while I was cooking I heard the strangest noises coming out of the recycling bin.
