It is so hot and everybody is waiting for the rain.
Rain in the desert is a real miracle.
The whole place explodes! Instead of sand and rocks we have grasses, flowers, frogs and fish (!?!) in little paddles.
Stunningly beautiful.
But actually I wanted to write down a recipe for you. For a change it is a completely normal one with sugar, spice and all things nice (and not really that healthy, but somehow today I don't care :-) )
I had some raspberries left over from the raspberry cake and decided to bake cupcakes.
The recipe comes from here. For those of you that don't speak German, here is what to do:
Melt 175 g of butter (3/4 cup)
Add 150 g of sugar (3/4 cup and 2 tablespoons)
a pinch of salt
and some vanilla extract or essence
Beat until foamy, then add 4 eggs
Mix 325 g of flour (1 1/2 cups) with 1 teaspoon of baking powder
Add the flour to the butter mix and also add 5 tablespoons of milk
Carefully lift 175 g (3/4 cup) of frozen raspberries under the dough, put it in a cupcake pan (depending on the size of your pan, it will make 6 to 12 cupcakes) and bake in an oven heated to 175 degrees Celsius (347 degrees Fahrenheit) for 25 to 30 minutes.
For the topping, mix 250 g (1 cup) of cream cheese with 125 g (1/2 cup) of melted white chocolate
