Healthy cupcakes
I love baking! This is the one thing I really miss since I started eating healthy.
Apart from the fruit crumble and the gingerbread houses I haven't baked in ages.
Today it is nice and cloudy and cool(ish), and I really felt like a Sunday treat.
So I tried out a recipe for healthy cupcakes. They are made with quinoa flour and without using sugar.
I wrote the recipe down a while ago from some website and unfortunately can't remember where I found it. If it is yours please let me know so I can give proper credit :-).
The cupcakes taste slightly unusual because of the quinoa flour, but I love them!
Here is what you need for six large cupcakes:
In one bowl, mix
2 cups quinoa flour
2 tsp baking powder
1 tsp cinnamon
In a second bowl, mix
3 tbls of oil (I used olive oil)
4 tbls maple syrup or honey
2 mashed ripe bananas
1 cup soy milk, almond milk or cows milk (I used almond milk which is delicious)
1 tsp lemon juice
1 cup of berries (I used a frozen berry mix)
Preheat your oven to 170 degrees celsius (340 Fahrenheit)
Mix the dry and the wet ingredients together (don't overmix), fill the dough into a cupcake pan and bake for 30 to 40 minutes
