Last year in November I used to live off rhubarb and apple crumble which is really delicious but not particularly healthy.
I was so excited finding rhubarb in the shop that I bought lots, forgetting that I am not eating sugar and flour anymore.
So I decided to try it out without my usual ingredients, and you know what, it tastes just as good!
Here is what you need:
About half a kilo of rhubarb (17.5 ounces)
2 large apples
Juice of one orange (I didn't have an orange so I used lemon juice)
100 - 150 gram (3,5 to 5 ounces) of ground almonds (I also didn't have a lot of almonds left, so I put desiccated coconut in too)
About 8 dates (put the dates and some water in a blender and mix until it is a paste)
Cinnamon
Preheat oven to 200 degrees Celsius (392 Fahrenheit)
Clean and cut the rhubarb and the apples and put some cinnamon on if you want to:
Mix the almonds, the dates, the freshly-squeezed juice and the coconut together with the fruits:
Put mixture in an oven-proof dish and bake for about 40 minutes:
And then enjoy! It is great as a dessert, with tea in the afternoon, with cream or ice cream and with custard sauce...
